Thixotropic
A material whose thickness changes with how hard it is being worked: thin while it is stirred, brushed or troweled, and thick again within moments of being left alone. It is the property that lets a coating stay on a vertical surface instead of running down it.
What thixotropic means
A thixotropic material changes its thickness depending on how hard it is being worked. Left alone in a pail it is stiff, close to a paste. Stir it, brush it or drag a trowel through it and it thins out and spreads. Stop, and within moments it stiffens again where you left it.
That is the whole idea, and it is a more useful property than being simply thick. A material that is thick all the time stays put beautifully and is miserable to apply: it drags, it resists the tool and it leaves whatever the tool did to it. Thixotropy gives you both halves of what you actually want, which is a product that spreads under a tool and holds still once the tool has gone.
Why it matters: gravity is the problem it solves
On a flat slab, gravity is your friend. It pulls the coating level, hides the tool marks and does half the finishing for you. That is what a self leveling floor product is designed around, and it is why those products are formulated to keep flowing.
Point that same material up a wall and the identical property becomes the failure. It flows, and the only direction available is down. A cove run in a floor product looks correct for a few minutes and then thins at the top, builds a heavy bead along the bottom, and leaves a visible line where the material stopped moving. Nothing was applied badly; the product simply did what it was built to do.
So a cove base, a vertical return, a curb or an upstand is not the floor specification applied to a different surface. It is a different product requirement, and thixotropy is the name of the requirement. It is a trade, not an upgrade
The property that keeps a coating on a wall is the same property that stops it flattening itself on a floor. A thixotropic product laid across open slab holds whatever the tool left in it: trowel lines, roller stipple, and a mark at every edge where one pass met the next after it had begun to recover.
On a cove that is exactly the point, because the shape has to be held while it cures. On an open floor it is a finish problem you have chosen. This is the same shape of trade that novolac makes on chemical resistance: a real gain in one direction bought with a real loss in another, and the mistake in both cases is reading the more specialized product as the better one.
How to work it, and how to spot it
Place it, shape it, and leave it alone. Every additional pass thins the material again, and it needs an undisturbed moment to recover. Working an area over and over keeps it in its thinned state long enough for gravity to get a hold, which is how a cove slumps while the installer is looking at the next section. The instinct to keep fussing at a surface until it is perfect is the wrong instinct with these products.
As for identifying one, the data sheet will normally say so outright, or describe the product as non sag, trowel grade, vertical grade or paste consistency. What you cannot do is judge it by how the material looks at rest, because plenty of ordinary coatings sit thick in an undisturbed pail and then flow freely once they are spread. That is precisely the behavior a vertical surface cannot tolerate, so it is worth reading rather than guessing.

Why can I not just run my floor epoxy up the cove?
Because a floor product is built to do the opposite of what a cove needs. Self leveling chemistry is designed to keep flowing until gravity has pulled it flat, which is exactly the behavior you want on a slab and exactly the behavior that empties a vertical surface.
Run it up a cove and it will look right for a few minutes and then sag, leaving the top of the cove thin, a heavy bead at the bottom, and a line where it stopped. The fix is a different product rather than a thicker application of the same one.
Is a thixotropic product just a thicker one?
No, and the difference matters. A simply thick material is hard to work at every moment: it drags under a trowel and it resists brushing. A thixotropic one is thick only at rest, and thins as soon as it is worked, so it spreads with reasonable effort and then sets up where you put it.
That is why the property has its own name. Thickness alone would make a product that stays on a wall and is miserable to apply; thixotropy gives you both halves.
Does that make it the better product?
Not generally, no. It is a trade rather than an upgrade, in the same way novolac is.
